Coppa is a cured meat product obtained from the processing of pork meat of the cervical dorsal anatomical region of the neck. For the production pork meat is used that has not undergone freezing processes. The finished product as a whole consists of pork neck meat cured and stuffed into natural gut, bound with rope. It is cylindrical in shape, slightly tapered to the end. The length at the end of the curing is on average 20-30 cm.
